Serves 8
Combine juice, water, and salt in a saucepan and bring to a boil. Add couscous and cinnamon, stir, and adjust heat to low. Simmer for 10 minutes. Remove pan from heat, add walnuts and vanilla, and allow flavors to mingle for another 10 minutes. Rinse an 8" X 8" baking dish with water. Do not dry. Add cous-cous mixture and pack down. Allow "cake" to cool before serving.
