Baked Tofu
The easiest way to prepared tofu is to bake it. Use either fresh tofu or fresh tofu that has been frozen and then thawed. For baking, we like it thickly sliced.
Serves 4
- 1 teaspoon olive or sesame oil (optional)
- 1 lb fresh (or thawed frozen) extra-firm tofu, cut in 1/2" slices
- 1 teaspoon dried thyme, dill, or other favorite culinary herb
- 1 tablespoon tamari soy sauce
Preheat oven to 350°F. Place tofu slices in a single layer in a 9 X 13 inch baking dish. Sprinkle with seasoning and tamari and bake for 25–30 minutes.

Tofu that has been frozen and then thawed has a meatier texture. It can be thawed just enough to slice. Before slicing you can squeeze out some liquid but it isn't really necessary; the extra moisture helps simmer the tofu while cooking, improving the texture and allowing the spices to absorb well. Cover the pan for the best texture. |
