Brown Rice Polenta

This brown rice version of polenta is made from Eden® Organic Short Grain Brown Rice Flakes, a product we always have in our pantry for a quick breakfast cereal (only 3 minutes cooking time!) or, even more so, for making this really tasty and easy to make polenta. The unique aspect of this product is that the short grain brown rice is roasted to bring out the delicious, nutty flavor of their rice and then rolled into flakes. While the brown rice polenta great as an accompaniment to salads or used any other way one would include polenta within a meal, at our house, we love it at breakfast topped with almond butter or sesame tahini and apple sauce.

Preheat oven to 375° F. or 350° F. Convection Bake

In a blender, grind Eden Brown Rice Flakes into flour (makes 2 cups flour). In a large mixing bowl, add 3 cups of boiling water to the flour, mixing thoroughly. The consistency will be similar to thick mashed potatoes. Using a spoon, spread dough into an oiled 13" X 9" baking dish to about ¾' thickness, generously moistening the spoon with water frequently to facilitate the spreading.

Transfer baking dish to the oven and bake for about 40 minutes until browned and somewhat crisp on top while still soft in the middle-similar to polenta.

After removing from the oven, allow brown rice polenta to set for 5 minutes before cutting.
