Fresh tofu has a smooth texture similar to fresh mozzarella cheese. We like to bake fresh tofu in an uncovered pan.

Tofu that has been frozen and then thawed has a meatier texture. It can be thawed just enough to slice. Before slicing you can squeeze out some liquid but it isn't really necessary; the extra moisture helps simmer the tofu while cooking, improving the texture and allowing the spices to absorb well. Cover the pan for the best texture.
